Starting to eat healthier

I've decided the words "You are what you eat", are indeed true. I have become a tuna sandwich on wheat, and a hand full of pistachios. I have become nacho cheese sauce. I have become lazy.

Sooo I have decided to eat only things that will help my body, instead of slowing it down. I have decided to eat things that will give me energy and nutrients, instead of cellulite and gas. Ideally I would love to go 100% raw, but I'm not sure if this is feasible at this time in my life. But I do want to introduce more raw foods into my diet.

Yesterday I ate very healthy, but not very raw. I had a bowl of soup with added broccoli, and a can of tuna for lunch. For dinner I ate a portabello mushroom and goat cheese pannini from Whole Foods, with a healthy portion of their raw marinated vegetables. I am searching for a great recipe to make those at home, (I CRAVE them!)

Today I woke up pretty tired, and craving something unhealthy and spicy. (As I often do when I have a hangover.) And I remember reading a recipe on Raw Food Diet Inspiration for RAW, VEGAN, NOT-CHO CHEESE!!!!! I already had a few of the ingredients in my fridge (cilantro, red onion, garlic) and I ran to the store to pick up a few more ingredients. Roma tomatoes, jalapeno, almonds, avocado, taco seasoning, dates, and a red bell pepper. I also bought some baked organic tortilla chips (not raw at all) to make nachos with. I added some warmed up black beans, and pickled jalapeno slices to make it REALLY feel like nachos! (I didn't even end up eating all the chips.)

I blended all the raw ingredients together in my magic bullet blender. It fit perfectly, and blended together very smoothly. The almonds made it a bit thicker, think the texture of hummus?

I poured the blended mixture over the chips and black beans, and topped with a generous portion of pickled jalapenos! It really hit the spot. I'm super excited to find a new recipe to try out tomorrow!
